About the night class
As part of the exhibition The Valley by Fabrice Hyber, the Fondation Cartier invites Guy Savoy, chef holding La Liste’s Best Restaurant in the World title for the sixth consecutive year, and linguist Mathieu Avanzi, to participate in this discussion series. Within the exhibition spaces, the two guest speakers discuss the hypotheses proposed by Fabrice Hyber in his paintings before a live audience.
Over the course of this morning event, they will discuss everything that comes to mind, from words to food, and more particularly how language and gastronomy forge cultures. By taking inspiration from Hyber’s works Word food, Babel, and Le Jeu nécessaire, they will make the connection between language, food, and (agri)culture.
This live discussion will be broadcast simultaneously on the websites of the Fondation Cartier and *Duuu Radio, and in the form of podcasts via the main platforms.

- Guy Savoy
At the age of fifteen, Guy Savoy decided his destiny was to become a chef and nothing else! He was introduced to the wealth of this profession alongside Louis Marchand, a renowned chocolatier in his hometown, before perfecting his skills under the Troisgros Brothers at Lasserre in Paris, the Lion d’Or in Geneva, and L’Oasis in La Napoule. His talent drew the attention of Claude Vergé who entrusted him with the Barrière de Clichy. He opened his first restaurant in Paris at the age of twenty-seven and rapidly gained recognition in the world of gastronomy. Guy Savoy is now based at 11 quai de Conti and has two Michelin Stars, he is a member of the Gault & Millau Academy (five Toques d’Or), and for the sixth consecutive year, holds La Liste’s Best Restaurant in the World title. He is the owner of five restaurants, including one in Las Vegas.
- Mathieu Avanzi
Before becoming a professor at the University of Neuchâtel (Switzerland), where he currently directs the Center for Dialectology and the Study of Regional French, Mathieu Avanzi was a lecturer in the French language department of the Sorbonne. His work focuses on the geographical variation of French (regional words, local expressions, pronunciation variants, and accents), and the relationship between regional French and Gallo-Romance dialects. He writes for the blog “Français de nos Régions” and is the author of several books, including Comme on dit chez nous (2020) and Comme on dîne chez nous (2021), both published by Le Robert.
